Pork Adobo
A savory and tender Filipino dish made with pork marinated in a flavorful mix of soy sauce, vinegar, garlic, and spices, then simmered until tender and delicious.
Ingredients
- -2 lbs pork (cut into pieces, preferably pork belly or shoulder)
- -1 cup soy sauce
- -1/2 cup vinegar
- -1 onion, chopped
- -6 cloves garlic, minced
- -1 bay leaf
- -1 tsp ground black pepper
- -1/2 tsp salt (to taste)
- -1/2 cup water
- -1 tbsp cooking oil
- -1 tbsp brown sugar (optional)
Instructions
- -In a large bowl, combine the soy sauce, vinegar, garlic, onion, bay leaf, black pepper, and salt. Add the pork pieces and marinate for at least 30 minutes to 1 hour (or overnight for maximum flavor).
- -In a large pan, heat the cooking oil over medium heat. Add the marinated pork pieces and cook for 5-7 minutes, turning to brown all sides.
- -Add the marinade mixture to the pan, including the garlic and onions. Add water and bring to a boil.
- -Lower the heat and let it simmer for 30-45 minutes, or until the pork is tender and cooked through.
- -If desired, add brown sugar to balance the acidity and sweetness of the dish.
- --Continue to simmer until the sauce thickens to your desired consistency.
