Pork Adobo

A savory and tender Filipino dish made with pork marinated in a flavorful mix of soy sauce, vinegar, garlic, and spices, then simmered until tender and delicious.

Ingredients

  • -2 lbs pork (cut into pieces, preferably pork belly or shoulder)
  • -1 cup soy sauce
  • -1/2 cup vinegar
  • -1 onion, chopped
  • -6 cloves garlic, minced
  • -1 bay leaf
  • -1 tsp ground black pepper
  • -1/2 tsp salt (to taste)
  • -1/2 cup water
  • -1 tbsp cooking oil
  • -1 tbsp brown sugar (optional)

Instructions

  1. -In a large bowl, combine the soy sauce, vinegar, garlic, onion, bay leaf, black pepper, and salt. Add the pork pieces and marinate for at least 30 minutes to 1 hour (or overnight for maximum flavor).
  2. -In a large pan, heat the cooking oil over medium heat. Add the marinated pork pieces and cook for 5-7 minutes, turning to brown all sides.
  3. -Add the marinade mixture to the pan, including the garlic and onions. Add water and bring to a boil.
  4. -Lower the heat and let it simmer for 30-45 minutes, or until the pork is tender and cooked through.
  5. -If desired, add brown sugar to balance the acidity and sweetness of the dish.
  6. --Continue to simmer until the sauce thickens to your desired consistency.
