Ube Halaya

A creamy, sweet, and vibrant Filipino dessert made from purple yam.

Ube Halaya

Ingredients

  • -1 kg purple yam (ube), boiled and grated
  • -1 can (14 oz) condensed milk
  • -1 can (12 oz) evaporated milk
  • -1 cup coconut milk
  • -1/2 cup butter
  • -1 cup sugar (adjust to taste)
  • -Optional: grated cheese or latik (toasted coconut curds) for topping

Instructions

  1. -Boil the purple yam until tender, peel off the skin, and grate finely.
  2. -In a large pan, melt the butter over medium heat.
  3. -Add the grated purple yam, condensed milk, evaporated milk, coconut milk, and sugar.
  4. -Cook the mixture over medium-low heat, stirring constantly to avoid burning.
  5. -Continue stirring until the mixture thickens and starts to pull away from the pan (about 30–40 minutes).
  6. -Transfer the mixture into a greased container or mold and let it cool completely.
  7. -Top with grated cheese or latik if desired.
