Ube Halaya
A creamy, sweet, and vibrant Filipino dessert made from purple yam.
Ingredients
- -1 kg purple yam (ube), boiled and grated
- -1 can (14 oz) condensed milk
- -1 can (12 oz) evaporated milk
- -1 cup coconut milk
- -1/2 cup butter
- -1 cup sugar (adjust to taste)
- -Optional: grated cheese or latik (toasted coconut curds) for topping
Instructions
- -Boil the purple yam until tender, peel off the skin, and grate finely.
- -In a large pan, melt the butter over medium heat.
- -Add the grated purple yam, condensed milk, evaporated milk, coconut milk, and sugar.
- -Cook the mixture over medium-low heat, stirring constantly to avoid burning.
- -Continue stirring until the mixture thickens and starts to pull away from the pan (about 30–40 minutes).
- -Transfer the mixture into a greased container or mold and let it cool completely.
- -Top with grated cheese or latik if desired.
